aloo-sukhi-sabji-ingredientsThe potato is, well.. a simple vegetable. It gets importance by being part of another vegetable, e.g. cauliflower, capsicum, whatever. But here is a dish where it comes into its own. It takes 40 minutes to prepare.

ALOO KI SUKHI SABJI
The ingredients for 5 to 6 persons

Ingredients:
Mediumm size potato – half kg
Four medium size onions finely chopped
3 to 4 green chillies chopped
Half cup coriander leaves chopped
Half teaspoon mustard seeds
1/4 teaspoon turmeric powder
1 or 2 lemon (enough to make 2 table spoons juice)
3 table spoons vegetable oil
Salt to taste

Boil the potato and skin it. Cut it into small pieces. Warm the vegetable oil in a pan and add mustartd seeds. The mustard will give a tell tale crackling sound. At that point add the chopped green chillies and the finely chopped onions. Let the onion turn golden brown. Add salt and turmeric and stir (see picture). Add potato and mix the ingredients well. Then add the chopped coriander leaves and the lemon juice. Cover and cook on low flame for 5 to 7 minutes.

The humble potato is transformed to a heavenly dish.
Note: One could use dry raw mango powder (amchur) if you do not have lemons.
