CHIDDIPUDI [CREPES] — SAROJ
Here is a dish which Bihar’s answer to the French Crepe, or American Pancake).
It is vegetarian, no eggs, uses whole wheat and no baking soda.

The ingredients for this dish of 6 rolls :
Firstly :
- 2 cups of whole wheat flour.
- 1/2 cup sugar
- 4 cups water.
- 2 medium size banana.
- Honey to taste.
- 2 tablespoon ghee (clarified butter) or butter.
Method : Mix well the flour, water and sugar so that you have a dilute batter. Keep it for 20 minutes so the sugar dissolves. Heat a pan with one teaspoon (not tablespoon) ghee. Spread three tablespoon batter on the pan. Cook on low heat and flip after 5 minutes. Heat this reverse side for 2 – 3 minutes. Now lay a few longitudinally diced banana pieces along the diameter of the almost cooked chiddipudi.
