DAL KA DULHA [The Groom of the Dal] or MAGAHI MOMOS or DAL DUMPLINGS

Few dishes in the category of rustic food can rival the Dal Ka Dulha in terms of simplicity, nutritional completeness and wholesomeness. You can call it Bihar’s answer to the Chinese dumplings or Tibetan momos. And it is low calorie too.

The ingredients for a meal for 2 persons are:

  • 1 cup of shelled (red) Masoor Dal (Masoor Lentil).
  • 4 cups water,
  • 1.5 cups of whole wheat flour.
  • Spices: Half teapsoon each of turmeric powder and ginger-garlic paste and quarter teaspoon each of coriander powder, garam masala, and chilli powder.
  • Tadka: One tablespoon of clarified butter (ghee) and cumin speed.
  • Salt to taste.

Method :
Wash the lentil and put it with water, spices and salt (to taste) to boil. Let the lentil cook [Hint: if you are using a pressure cooker you must normally wait till it sings twice]. Knead whole wheat flour in water and divide it into 10 small round portions. Use a rolling pin to roll it into small round puris. Fold each puri holding onto diametrically opposite points. Here is where you can embellish the humble bihari momo. You can insert a couple of raisins to impart a taste. Gently put the momos into the lentil soup. Let the whole thing simmer for 10 minutes. Then you can add a tadka of ghee and cumin.

The dish is ready to eat. It is a complete dish – low calorie, protein and carbohydrate endowed. You can take tomato chutney or a tangy vegetable to go along with it – that completes the vitamin part. Siddhaths relished it with sweet and sour tomato chutney and we urge you to try the same.
