EGGPLANT CUTLET — SUDHA
Takes 30 minutes to prepare.
Ingredients
The ingredients for 15 pieces:
One medium size oval eggplant (brinjal)
100 grams dry dates
50 grams dry cocunut
One cup gram flour (besan)
A little ghee or refined oil.
Salt and chaat masala to taste.
Method: Grate the eggplant and cocunut. Grind the dry dates to a coase paste. Mix them all with gram flour, salt and chaat masala. Give it flat elliptical shapes as for a cutlet. Roast it with a small amount of ghee or refined oil on medium flame till it turns a golden brown. [Alternately these can also be deep fried]. Since it is sweetish due to the dates and coconut as well as salty it is best eaten with a dip of chilly-cum-coriander chutney.
