Kathal Dum is a gravied vegetarian dish of raw or green jackfruit.

The ingredients of this dish for 6 persons are:

Half kg raw jackfruit pieces
2 medium size tomatoes
2 medium size onions
3 cups of water
Two tablespoon mustard or refined oil
Spices : One teapsoon each of garlic paste and ginger paste, half teaspoon coriander powder and quarter teaspoon each of garam masala, turmeric powder and chilli powder. Half teaspoon cumin seed. A pair of bay leaves. Salt to taste.

Start with pieces of raw jackfruit. Boil it in a pan of water for 10 minutes. Strain the water.

Make a paste of the onions and tomatoes. In the wok which contains the hot oil add cumin seeds and bay leaves until the cumin seeds make a sizzling sound which signals that they are well fried. Add the onion-tomato paste, the ginger-garlic paste and the remaining spices. Add additional salt to taste. Stir it until it becomes a thick golden brown paste. Add three cups of water. Add the boiled jackfruit pieces. Cover with a lid and heat for 10 minutes. Then garnish with green coriander leaves.

Serve with rice or chappatis.
