PANEER BH URJI [A COTTAGE CHEESE BASED VEGETABLE]
The paneer is, well.. not strictly a vegetable. So here is a dish where it plays the role of a vegetable. It takes little time, say 20 minutes, to prepare and is finger licking good.
PANEER BHURJI
The ingredients for 5 to 6 persons
Ingredients:
250 grams paneer
Two medium size onions finely chopped
Two tomatoes chopped
Half teaspoon garlic-ginger paste
Half teaspoon cumin seeds
1/4 teaspoon turmeric powder.
One teaspoon coriander powder, half teaspoon garam masala powder
Half teaspoon chilly powder
2 table spoons vegetable oil
Salt to taste
Two table spoons coriander leaves chopped. This is for garnishing.
Method:
Cut paneer into small pieces. Warm the vegetable oil in a pan and add cumin seeds. The cumin will give a tell tale crackling sound. At that point add the finely chopped onions. Let the onion turn golden brown. Add tomato, garlic-ginger paste Add salt, turmeric coriander, garam masala and chilly powders and stir on medium heat. After five minutes add paneer and gently mix. After another five minutes of high flame (so that the mixture is relatively dry) turn off the heat. Then garnish with the chopped coriander leaves.
Paneer bhurji is ready to serve with chappatis, parathas or puris.
