This is a desert dish which among deserts is a low calorie and sits lightly on the stomach and is easy to digest. Since it contains no grains you can enjoy it in good conscience during religious fasting.
Lauki Kheer
The ingredients for 5 persons
Firstly
1 medium sized lauki (bottle courd)
1 litre milk
4 tablespoons sugar
5 green cardamom in powdered form
10 strands of saffron
1 ladle full rasins
Method:
Peel the lauki (bottle courd) and grate it. Put it in a heated pan and cook it on medium heat till the grate is dry.
Heat milk in another pan. Add sugar when it comes to a boil then let it simmer, until the milk has reduced to one half (0.5 ltr) of its original volume. Then add the dry grated gourd and turn the heat low. Keep stirring for ten mimutes. Than add cardamom powder, saffron and rasins and turn the heat off. You may add some dry fruits such as almond , cashew and ptistachio pieces. Serve it hot or cold.
